One Fine Day - Dairy-less & Egg-less Cake (Indonesian Cake Version)

For those people who have things for cakes, but have an allergies with dairy and eggs. I have a very great recipe for you to try. I've tried some of eggless & dairyless cake recipes that go viral on the internet, but when I tried them, it taste very plain and not that yummy like what they said. 

Since I was little, my mom always make this cake once in awhile. For some Indonesians, this cake might be very familiar, since it has very unique flavour. I used to really hate this cake because of it smell, but the more older I grow, the more I fall in love with this cake.



EASY INDONESIAN NO-DAIRY & NO-EGG CAKE


Ingredients:
  • 500 grams all purposed flour
  • 500 grams palm sugar
  • 1 tsp sodium bicarbonate
  • 1 tsp spekkoek powder
  • 2 1/2 glasses of water
  • 1 glass of cooking oil


Directions:
  1. Preheat a sauce pan, put the palm sugar & water together until the palm sugar is melting, stir occasionally
  2. Measure the mixture of sugar water into a 2 1/2 glasses, and set aside.
  3. Combine the dry ingredients together, such as flour, sodium bicarbonate & spekkoek powder
  4. Pour the sugar water into the dry ingredients, and stir it until it well combine
  5. Pour the cooking oil into the cake mixture, and stir it again
  6. Pour the cake mixture into your cake mold, and put it in the oven (350F) for about 20 minutes or so until the cake is cooked, you need to check once in awhile to see if the cake is cooked or not.


Note:
The glass that we usually use is a 250 ml glass. And you totally can change the all purposed flour into almond flour or other gluten free flour as well. This recipe is easy and we don't need our fancy electric mixer. :)
